One of the biggest influences on the flavour of wine is whether it has been matured, or even just stored, in oak. There are people who are prejudiced against oaked wine and will complain of even the slightest hint of oak, but many experts agree that if a wine has been carefully oaked it does not taste of wood, but more like a wine that has had its flavour subtly enhanced.
Oak aging of wine occurs when the wine has been fermented and/or aged in oak casks so that the flavour of the surrounding wood infuses some of its woodiness into the liquid. The resulting wine will usually taste richer, with creamy vanilla undertones and sometimes a little woody or even sawdusty. The oak is a type of seasoning for wine and getting the optimum level of oaky flavour is vital if a wine is to taste good at the end. Oak aging usually takes place in small oak barrels that hold 225 litres, being replaced every two or three years as newer barrels give the best flavour.
Oak is considered to be the most ideal wood for this aging as it not only has superb watertight qualities but gives the right sort of flavours,aromas and textures to enhance the wine. But there are different types of oak that offer certain distinctive flavourings. The most commonly used are the highly-prized, tightly-grained French oak which gives a subtle hint of oakiness, whilst American oak gives a more obvious vanilla character to the wine. Consequently wines that are more powerful in flavour tend to be stored in American oak such as Rioja, North and South American and Australian varieties. Other factors that allow oak aging to affect a wine's taste are the size of the barrels, (larger ones giving less flavour), the age of the wood used, the actual time the wine spends within the cask, and whether the barrels have been toasted (i.e. lightly burned on the inside).
Now the fashion is for lightly oaked wines and winemakers are producing more subtle, elegant flavours. Red wines are often aged in oak, which add the required extra body and richness, with hints of wood-spice, cream and tannin. Soft light reds such as Beaujolais are typically unoaked, but the richer more powerful styles such as fine red Bordeaux or Californian Cabernet Sauvignon are almost always aged in oak. Similarly Rioja is oak aged for a long time to give it a distinct mellow creaminess. Port and Madeira are wood-aged and have an obvious hint of oak, whilst even some Champagnes are aged for a short time in oak barrels, although they never taste very oaky, just a bit more full-bodied. Some premium sweet white wines are also oak aged.

Wine tasting is verisimilar to a fine art. It engages three senses to appreciate the aroma of the bouquet. There's a certain savoir-faire to letting wine languish on the palette as the quintessence of the grapes returns back to life. The Eyes

Before placing the glass to your lips, stare deeply into the wine goblet. What do you see? At first glimpse, it may appear simply "red" or tinged in yellow. But, as one stares into the abyss of the wine glass, a spectrum of shades may become apparent. Is the red wine rendering undertones of tan or brown? In certain whites, a green aura may be another value to identify. What is the hue of the wine?


The blush depicts what, where, when and how. In other words, the color of wine can identify the type of grape, its region of origin, age and whether it's a blend or 100 percent of one grape variety. The dark the intensity of red wine projects its grape variety. For instance, Cabernets and Petite wine Syrahs gravitate toward the deeper red. In terms of Pinot Noir and Merlots, they are generally lighter. However, Merlots may exude more of a density in color.


On the rim of the glass, a wine's coloration can tell its age. By tilting a glass at approximately a 45-degree angle, the edge of the wine may show a tint ranging from brown, purple to orange. Purplish represents youth; whereas, orangey to brownish tints demonstrate maturity.


By the time an aficionado visually inspects the wine for age, blend and color, the aromas should start to burgeon.


Now, without spilling the wine, swirl the glass in gradual circular motions - or until you feel comfortable, enough to give it one vigorous swirl. (This can take a little practice). It enables the wine to open up like a rose blossoming right before the nose as it releases its fragrant constituents. After you stop swirling the glass, you will notice that it is crying or walking back to cavity of the glass. These wine drippings are referred to as the wine's "tears" or "legs." The more prevalent the number of tears or legs, the more alcohol the wine contains.


The Nose

To some, the smell of wine is far more relevant than its taste. Whether a wine taster prefers to sniff, inhale or sip wine, taking in the bouquet or (as some, call it the "nose") is a vital step that should NEVER be skipped. Intensifying the essences of wine is an important facet of the fine art of wine tasting because it arouses the grapes flavors for easy recognition. A rapid way to capture the aroma of wine is to swirl the wine up and down the sides of the glass. As it leaves a small amount of wine residue or a lining along the interior of the glass, these thin layers will evaporate from the exposure to oxygen - emitting a wonderful bouquet.


The Palette

And now for the pay-off, take a moderate sip of wine. In a docile fashion, swish it throughout the mouth's crevices, engaging the different parts of the mouth and tongue to take delight in the culmination of zests. Allow the tongue to frolic, dance and stroke the wine's texture. Is the kiss smooth? Is the tongue left parched or is it invigorated? I love walking around wine shops. Especially really good ones. Some of them have wonderful bottles of vintage wines, ports, sherries, madeira, marsala and brandy in lovely dusty racks. Others give you a list and you can go and actually look at a bottle of wine that is on the list at ?2000. Of course buying it is out of the question, but you will always remember that day when you actually touched a Rothschild '47 or whatever it was for the rest of your life.


If you live or work in London there are some fabulous wine merchants to window shop in. You can potter around the more expensive areas of the West End and discover a cornucopia of wine shops with superb wines from all over the world. Many specialise in the more expensive vintages.


Looking round these emporiums is a bit like taking a kid into a sweetshop. You look at all these wines that you have read about only in fables and decide that you will have a bottle of 'house-red' thanks. You can't tell the be-suited gentleman behind the wooden counter that your bank manager would have a fit if you bought the one you really wanted. You also know that if you try to bluff him by asking for the '85 rather than the '86 he will produce the bottle from the folds of his morning suite.


The airports of Western Europe, particularly Amsterdam and Zurich for transit passengers are amazing. Good wine is not in it. From behind glass, possibly bullet-proof, you can gaze at bottles of 200 year old brandy. I wonder if anyone actually drinks it, or do they frame it or something? You may wonder, whilst looking for the rather cheaper duty-free shop which sells things for under $1000, whether you could buy some of these things rather less expensively somewhere else.


If you go to Italy or France you can just go to the local shop in the town and you will be amazed at the range of wines there. Of course the local wine/s will be paramount in the mind of the storekeeper or wine merchant, but there will be some special wines that really need attention paid to them. Little stores can often come up with some really cracking wine if persuaded to. "This is my last bottle" really means that the wine is really good and possibly too good to be drunk by a foreigner.


If you take a tour of the wine growing regions of Italy or France you will be able to buy a case or two of whichever wine you took a fancy to on your holiday. Having tasted it in Italy though, does not necessarily mean that it will taste the same in England or Germany when it's only 2C outside.


Most of us would love to go to interesting places; see how wine is made and taste it on the spot; have the time to wander round wine warehouses and have the knowledge of what to look for. The rest of us take advantage of the new ability of being able to buy wine online. It's much easier but not, perhaps, as much fun.
